# How-To Steps:

01 - In a large bowl, cream together butter and sugar until light and fluffy. Add egg, vanilla extract, and almond extract (if using); mix until combined. In a separate bowl, whisk together flour and salt. Gradually add dry ingredients to the wet ingredients, mixing to form a soft dough. Divide dough in half, flatten into discs, wrap, and refrigerate for at least 30 minutes.
02 - Preheat oven to 350°F (175°C). Roll out dough on a floured surface to 1/4-inch thickness. Use Taurus-themed or zodiac cookie cutters to cut out shapes. Transfer to a parchment-lined baking sheet, spacing cookies 1 inch apart. Bake 10–12 minutes, or until edges are just golden. Cool completely on racks.
03 - Beat egg whites (or meringue powder + water) to soft peaks. Gradually add sifted powdered sugar; beat until stiff, glossy peaks form. Add lemon juice and vanilla; mix again.
